Our Traditional Balsamic Vinegar of Modena D.O.P. Extravecchio is a masterpiece of Modenese vinegar craftsmanship, aged for a minimum of 25 years. Made from cooked must of typical Modenese grapes, processed over an open flame in copper kettles, it undergoes a natural fermentation and acetification process.
Aged in small barrels made from fine woods such as oak, chestnut, and juniper, it matures slowly through successive transfers, developing a rich and complex aromatic bouquet with a perfect balance between sweetness and acidity.
